Norwegian Dried Fish with Pea and Zucchini Cream: Recipe
Ingredients for 2 persons
150 g of already soaked Norwegian dried fish, 200 g of zucchini, 150 g of fresh peas, 5 tablespoons of extra virgin olive oil, 2 tablespoons of water, 8 fresh mint leaves, salt, pepper; for finishing: 6 spicy olives, 3 zucchini flowers, edible flowers, extra virgin olive oil.
Preparation
Cut the green part of the zucchini into slices, fry in a pan with two tablespoons of oil and add the peas. Reduce heat, add water and simmer covered for about 20 minutes. Once cooked, add the mint and remaining oil and mix until you get a smooth and velvety cream, which is then passed through a fine sieve. Boil dried fish without skin in boiling salted water for 3 minutes, drain the water and season with oil and pepper. Transfer the cream to a bowl, add a few pieces of dried fish and a few peas. Arrange the stemless squash flowers and flower petals over the olives.
